Lunch for Tuesday, August 31, 2010

It's the last day of August and last night I started working on my Halloween projects.  I also finalized my Christmas theme and ideas.  After doing all of that I feel so much better.  I have to create in order to be happy.  LOL

For today's lunch I heated up some dumplings and cooked a tamagoyaki.  I also took some slices of ham and placed a green onion on them and some laughing cow cheese, rolled them up and sliced into thirds.  The green "thing" in the middle is actually a baby bell pepper that was inside one of my larger ones.  I have this happen every once in a while and this time I kept it for my lunch.  I have not made tamagoyaki in so long. I can't wait to eat this lunch!  Yum!

Today's lunch is leftover spanish rice, taco meat, & refried beans.  Nothing special just good food.  We had taco's for dinner and I tossed the leftovers in a container.


While out this weekend we ate at Toby Keith's I Love This Bar & Grill.  I ordered the Grilled Chicken Breast.  And OMG it was so good!  It had bacon and ham on top of it along with some BBQ sauce and cheese.  The picture does not do it justice and I had eaten half of it before I took the picture.

Today is just another sandwich day.  But I used a hamburger bun instead of sandwich bread.  I was hoping I had some olives for some eyes but I guess someone in my house ate them.  Oh well, the blue pics do well.  When I first laid this out I thought the tomato looked like a tongue.  I also added a instant miso soup packet and some ranch dressing for my veggies.  Happy Friday!

Well it is another non-cute lunch day.  But it is yummy leftovers.  I haven't made this particular casserole in a long time.  There is quite a bit of prep work and cooking time.  I have altered the orginial receipe given to me a long time ago.  When I was given this recipe I avoided making it.  Not sure why but I did try it about 6 years after I got it and it's one of my favorites.  One thing I love is that the measurements don't have to be exact.  Sure I received the original with amounts but again I altered it to my liking.


I'll share the recipe in case anyone wants to try it.
  • Preheat oven to 350 F.
  • Cook a box of elbow noodles in boiling water for 2 minutes then turn off heat, cover and let sit
  • Chop up a package of bacon, toss it in a large skillet and cook until done but not crisp.
  • Add a chopped onion and a chopped bell pepper to the skillet and cook until the onions are tender.
  • Add about a pound of ground beef, cook until done then drain.
  • Add two cans of tomato soup, about a cup of water some salt and oregano and cook until bubbly.
  • Drain noodles and place half into a casserole dish.
  • Pour half of the meat mixture on top of the noodles.
  • Pour the rest of the noodles in dish.
  • Pour rest of meat mixture in dish.
  • Cover with shredded cheese.
  • Cook for 35-40 minutes.
Yesterday I had lunch with a co-worker and an ex co-worker.  We ate at a place called 5 & Diner.  It is an old fashioned type diner.  I had a very delicious reuben sandwich.  One of my lunch mates had this very delicious looking strawberry shake.  They even put some whipped cream on the straw.  Very cute.  Oh how I wish I could eat ice cream and not get a belly ache.  Dang lactose intolerance!

Inspiration comes from all places right?  Yesterday I was whining about a boring lunch again and while I did not look through my books last night I did look at my email.  Confused?  I will explain.  I use hotmail and by using hotmail you can customize the way your email looks with color or pictures.  The theme I use has this cute little girl in various stages.  Sometimes she is watering the flowers and sometimes she is looking at the butterflies.  And she usually has her black cat with her.  I clipped a piece of the header and drew my inspiration from that.  Maybe someday I will put the girl on my lunch.


As for what is in today's lunch... We had hamburgers last night and there was an extra patty leftover.  I took that and crumbled it up and cooked up some rice and placed it on top of the hamburger.  Then this morning I steamed some carrots and broccoli and added some grape tomatoes and green grapes.  The butterfly is cut from a red onion.  Of course the cat is cut from nori.  It did remind me that I need to find some soy wrappers or something to make different color items.  And I realized after taking the picture and needing to head out the door for work that I could have added some more cuteness to the veggie part.  Oh well it is better than another sandwich.

Maybe I need to rename my blog to "My Sad Little Lunch". Today is another sandwich day. I just threw things in baggies again this morning. And after looking at the picture I do realize I could have done something to make it cuter. But my time is limited in the mornings and now that school has started again the rush to get the kid out the door is hectic. I know excuses, excuses.

While reading the Just Bento blog this morning Maki has an article about her 10 rules of bento's. And one of her rules is planning. That is what I have gotten away from. I use to plan my bento's the Friday before and followed them. Then I started free-styling and that is where I am now, with no plan. I think tonight I will go through my bento books and make a plan.

I have avoided posting my mundane lunches on here.  I didn't think they really belonged.  I do bring my lunch almost every day but they are not always cute, creative or fun.  Like yesterday, I ate a sandwich, chips and some strawberries all thrown in plastic baggies.  But I have decided to post whatever I eat, no matter what it looks like.  Maybe when I see the shame of my non-cute lunches posted I will put a bit more effort into them.

So for today's lunch I have leftover chicken, veggies and black-eyed peas.  My man cooked most of this meal.  It is so nice to have someone that will just get in the kitchen and help me out.  He cooked the chicken and the black-eyed peas.  I heated up the veggies.  I feel like such a slacker.  All I did was open some bags of frozen veggies, throw them in a pan and turn the heat on.  He marinated the chicken, chopped up jalapenos for the peas and stirred my veggies.  I sat on the sofa reading a magazine.

I have not had black-eyed peas for almost two years.  For my entire life I ate black-eyed peas on New Years Day for good luck.  I have to say I have had crappy luck for many years.  So for the last two New Years Day's I avoided eating them and my luck did change for the better for the most part.  Last night while asking my family what they wanted for dinner, black-eyed peas was mentioned.  I shuttered at the thought of the bad luck it might bring but it did sound good.  So I agreed to trying my luck again with promises that everything would be OK.  Now I am normally not a suspicious person but this is one thing in my life that I changed that worked.  Already today my slider button to silence my cell phone fell off.  Guess I should have just passed on eating them.  So we will see what happens now.

Food for August 13-15, 2010

This last weekend we went on a trip to Memphis.  And anytime we go anywhere we try to find the favorite local Mexican restaurant.  On this trip we found La Perla Tapatia in the Memphis suburb of Collierville.  The salsa was just the right amount of hot and the guacamole was delicious.  I ate the Pablano Peppers.  They are like a Chili Relleno but without the cheese inside.  These were filled with ground beef and potatoes.  Oh My!  They were the best!


The bench seat, chairs and everything wood at this restaurant is carved and painted.  It had a great Tex-Mex vibe.  The staff was very friendly and getting our food out was quick.  No so quick on checking back with us after we got the food but all and all it was good.


Another night we drove down to Tunica, MS to do some gambling and before we did we ate at Blue & White.  This place is amazing!  I was going to take a picture of my Country Fried Steak dinner but it was so good looking I started eating before I remember a picture.  The staff and other patrons were so friendly and fun to talk with.  We stayed for a while after we were done eating just visiting.


After we got back home we went for chinese buffet.  And while I was eating my wonton I saw it as a rabbit.  So I plucked a couple of peas and a carrot from fried rice and made it's eyes and nose.  I just had to play with my food.

For today's lunch I have some left over roasted chicken from last nights dinner and some stirfry noodles.  In the container I added some teriyaki sauce to toss with the noodles.  And there is my ever present strawberry.  I love strawberries so much that I could probably have a bento with just strawberries and be happy.

I don't know what my creative problem has been lately.  No cards have been made, no cute bento.  It's been hard to get out of my comfy bed early enough to make a proper lunch.  I value my sleep more lately.  As for no cards being made, I wish I could just go in there and create.  Ever since I moved all my craft stuff into the other room I haven't made but one card.  I think about it, but it just doesn't happen.  I even have new craft stuff to play with and it's just sitting there on my desk.  Maybe tomorrow.

For today's lunch I cooked some tiny ravioli filled with parmesan cheese. I diced some grape tomatoes and some left over bacon from Sunday breakfast and I will toss it all together and make a pasta salad. I also had drizzled some basil infused oil on top and added some Italian seasoning. mmm I can't wait.

I also made myself a snack using a strawberry, some oriental trail mix and some petite carrots.  Not much on color variety today and not cute.  But definitely edible.

On Friday I started looking on ebay again for more bento items. There is so much I still would like to buy and I almost spent the money but I luckily got busy and forgot all about it. There are also some new items on Bento & Co's website that I would LOVE to have but again I am trying to not spent the money. It only I had unlimited money for bento. sigh

For today's lunch I have rice, boneless chicken bites, carrots, grape tomatoes and a strawberry.  Not a wide variety but last night I was bad and ate some ice cream.  I know that may not be bad for some people but I am lactose intolerant.  So even with taking Lactade pills my tummy is very upset.  I should have know better but it sounded so good. 

I turned my chicken into little creatures.  I have been wanting to do a space themed bento but have not planned it out yet.  So these will have to do for now. 

I also have used the same bento box the last three days.  I love the shape of this one and I love that it is shallow.  Some of mine just seem too deep.  Only drawback is that it is a little on the tiny size for me.  I am a grown woman.  I guess I could call it my diet bento box.

Well I tried a little harder today to get a cuter lunch in.  I originally was going to cook up some rice last night but certain events prevented me from doing so.  So this morning I thought I would just have a sandwich.  That led down a path of destruction.  The bologna I was going to use was molded.  Fine... I grabbed the deli ham...molded.  UGH!!!  So I had to substitute it all and just use peanut butter.  Then I grabbed my cheese... molded.  What the!!!???   Luckily I had another brand new package.  I pulled out the broccoli, look pretty bad.  What you see in the picture is the best piece.  I threw the rest away.  Guess it's been too long since making bento's.  And we even went to the store last night.  Looks like I will need to go back to the store.

Long time no Bento.  I really needed to start making my lunch cute again.  I had been bring leftovers but didn't have the energy to make them into something cute.  So here is my attempt to begin again.  I made some teriyaki salmon, dumplings, veggie gratin cup and some grapes.  I did add a little bunny face but I think he looks a little scary.  Ugh I need some inspiration.
