I wanted to make today's lunch something easy and that I could enjoy on a hot day. It has been over 100 every day all week. And my coworker still wants to eat lunch outside. I know I could say no but it is nice to get out of the office.

Today I have small sandwiches, a mini sweet pepper, grape tomatoes, broccoli, grapes and an orange.

Today's lunch has some leftover mini pizza I made for dinner last night, a mini sweet pepper, broccoli, grape tomatoes, small container of ranch dressing, an orange and some grapes. Simple.

We finally hit triple digit temperatures here in Oklahoma. I dislike the extreme heat. It makes me want to just stay in my nice comfy air conditioned home and work. But I still ate my lunch outside today. I think my coworker that suggested has lost a marble or two. Probably from the heat.
For today's lunch I have some white rice with a seasoning sprinkled on top, some tempera shrimp, sautéed green beans, grape tomatoes, egg, mini sweet pepper, broccoli and in a side container I had an orange and grapes.

Long time no blog. I can't believe it has been over four months since I posted a bento. Sure I have made one or two since I posted but I never posted it.

I was whining to one of my friends/co-workers about missing making my lunches and also pointed out the fact of how much $$$$ I have been spending on eating out. Mostly the response was that if I wanted to be cheap I could start hanging out with our cheapest, penny pinchingist co-worker. Kind of pissed me off. But of course I got over it.

Then I was hearing excuses from the same co-worker about not knowing what to fix for lunch and I think the word hate was used to describe fixing a lunch. This co-worker is on a modified low carb diet. I started naming off all the different thing that I would put in my lunch if I was dieting like that (I probably should diet). And it was decided that I would make our lunch for today.

Since I was out of anything resembling bento material I made a trip to the store. I also got a new refrigerator yesterday too so I had to fill it up. :-)
So for today's lunches we have deli turkey with cucumber, carrots and bell pepper rolled in. The cucumber and bell pepper came from one of our farm neighbors. Yeah us! Also we have boiled eggs, broccoli, carrots, snap peas, mini sweet peppers, grape tomatoes, celery, bell pepper, beef strips, chicken strips, & cucumber leaves I carved with an x-acto. Don't remember who's blog I saw that on, but thanks for the great idea! For mine I added a small orange and a Babybel cheese and left out the extra carrots and celery.
So there we have it. A bento at last!

For today's lunch I cooked a veggie gratin cup, some white rice with portabella mushrooms, two tempura shrimp, broccoli, a mini sweet pepper and grape tomatoes.

I have not been happy with my pictures lately. I'm not sure what I am doing different but they look strange.

Last night I made Red Velvet Cupcakes and heart shaped Valentine Cookies.  My red velvet cookies came from a box.  I feel like I cheated. But I did make the candy hearts the are on top.  The Valentine cookies did not transport too well to work and got smashed.  Not all were bad but at least a few.

Today's Valentine lunch has white rice, red beans, shrimp, broccoli, mini sweet pepper, Babybel cheese, cherry tomatoes and some wasabi mayo I made.

Today's lunch was something simple.  I made small heart shaped peanut butter filled sandwiches using just two sizes of cutters.  I used the bigger cutter to cut the bread and a slightly smaller one turned upside down to smash the edges and seal the peanut butter in.  I also made a tamagoyaki which I have not made in forever.  I actually cooked it a little bit too long but it will still taste good.  And for the rest I have my Babybel cheese with a heart cut out, green bell pepper, broccoli, some ranch dressing for the veggies in the small container, a cutie orange with a heart cut in it, a small slice of apple, a few grapes and a thermos of light soy milk.  Can't have a peanut butter sandwich without milk.

Today's lunch has some leftover soup/pasta thing I threw together last night with beef broth, ground beef, carrots, potatoes, noodles, bell pepper, onion and canned tomato.  It was been cold and drizzly here and that is what sounded good.  Also I have my Babybel cheese, bell pepper, cutie orange, broccoli, apple and grapes.

For lunch today I have chicken thigh that was cooked in soy sauce and mirin placed on top of some napa cabbage, heart shaped rice, a Babybel cheese, broccoli, green bell pepper, some ranch dressing and a cutie orange.  Simple and quick.


Lunch for Monday, February 6, 2012

Last night I was craving shrimp and I remembered I had a bottle of the Jack Daniels Honey Whiskey in the refrigerator.  So I marinated the shrimp in the Whiskey while I made some white rice and gather all of the ingredients I was going to use.  After my skillet was hot I poured in the shrimp and the whiskey into the skillet.  Then I added some honey, bell pepper and sprinkled the shrimp with Chinese Five Spice and sea salt.  I let it cook until the Whiskey mixture was reduced and the shrimp was done.  This did not take long at all.  Yum Yum it was very tasty.

For lunch today I was still craving shrimp so I cooked some like Izumi aka Babykins did here.  It was very easy and quick.  Also in this bento I have some white rice that I added white and black sesame seeds to along with some dill.  It smelled so good while I was mixing it up.  I can't wait to eat it at lunch.  And in this box I have green bell pepper, my Babybel cheese, broccoli, a Cutie orange, red grapes and some provolone hearts with a carrot center in one.

Lunch for today is more leftovers. We had spaghetti for dinner and they left just a little bit in the pan. So I saved it for my lunch. I added a little chicken nugget chick with a party hat in the lower left.  It's kind of hard to see but it's there. 

In this bento I have my spaghetti, chickie chicken nugget, broccoli, bell pepper, Babybel cheese, orange, apples & grapes.

There will be no bento lunch tomorrow since my department is going out to lunch to celebrate Groundhog Day. Which just happens to fall on my birthday.  :-)

Today's lunch features one of the mini chicken pot pies I made over the weekend. I will just place it on a paper towel and microwave for a little bit at work.

For today's bento I am using my first bento box I ever purchased. Poor thing hardly ever gets used. But it is what I thought I just had to have when I first started this hobby.

In this bento I have my mini chicken pot, broccoli, boiled egg, ham flowers, carrot flowers, Babybel cheese, apples and grapes.

Today's lunch has a mix of leftovers in it. I cooked a chicken Friday night and with what was left I ended up making mini pot pies and chicken salad for my lunch today. I still have a few pies left and my include them in my lunch soon. I can freeze them right?

I'm this bento I have chicken salad with a few pasta leaves on top; a carrot flower, leftover roasted potatoes, broccoli, grape tomatoes, a Babybel cheese, apple, grapes and a strawberry.

Today almost everyone in my department has a lunch & learn scheduled except me & one other. One of the guys has been teasing me about how he will get a free lunch. I told him my lunch would be cuter & better than his. So here is my cuter lunch.

In this bento I have some couscous, a piece of broccoli, a Babybel cheese, ham flowers, carrot flowers, grape tomatoes, apples pieces, grapes, a strawberry & a chicken nugget bear that I made using provolone cheese and stuck her ears on with spaghetti.

I'd say this is much better than something brought in by a vendor. They will probably have pizza or sandwiches at their little lunch & learn. hee hee

So glad we went to the store. I have fresh veggies and that makes me happy. This bento is so much healthier and lower on calories (361) compared to yesterday's.

In this bento I have salmon broiled with teriyaki sauce, napa cabbage mixed with sea salt & balsamic vinegar, piece of broccoli, carrot flower, veggie gratin cup, grape tomatoes and my ever present Babybel cheese.

I love my Babybel Light cheese. Only 50 calories and it's a yummy treat. I picked up three bags of it yesterday.

I'm late in posting this since the app I use to post from my phone stopped working all together today. I tried all day long then coughed up some money and paid for one. Ugh.

So this morning if you had looked in my refrigerator you would only see eggs, liquor and not much else. We seriously needed to go shopping. Lucky for me we did that after work. But when I made this bento... It was sad. No fresh veggies.

In this high calorie bento (658!) I have a baked potato, small piece of leftover ribeye steak, leftover baked beans, ginger sauce, grape tomatoes, a cutie orange and a Babybel cheese. This is way more calories than I normally eat. I'll be glad to have a healthier bento for tomorrow.

Today's lunch is Tuesday night dinner leftovers. I made a pork loin stir fry with carrots, onion & instant ramen and egg drop soup and some chicken potstickers. The Kid and I loved it...Mr Man...he said he's had worst meals. He's a more slab of steak with a side of fries type of guy. Which makes it hard for my adventurous food spirit to cope with sometimes.

So luckily I had just enough to put together a lunch.

Along with my stir fry, soup & potsticker I added a Babybel cheese & a brown sugar mochi. Yum!




Lunch, Dinner & drinks for Wednesday, January 18, 2012

Today was a very stressful day so I went to lunch with a good work friend. Strangely enough we went to iHop. I had the Spinach & Mushroom Hashbrown Stack. It was delicious! The spinach & mushrooms were sautéed just right. The favors were great together. I got the egg substitute to make it a bit healthier and I didn't notice a difference.




For dinner I went to Caz's Chowhouse in downtown Tulsa with another really good work friend and some people she use to work with.

I ordered a Caramel Apple Martini. It's so good. I had it last time we went.




For my dinner I had the salmon with their house Spicy Coleslaw and green beans. Very tasty! The salmon was seasoned just right with a little bit of kick. The coleslaw has a definite kick and I love it! The green beans are your basic green beans with bacon. Yet flavorful.



Caz's is a busy place for downtown Tulsa. Service is a little slow but I don't mind that. The drinks are strong and the food is good. Parking is hard to come by but again they are revitalizing downtown.

I think I am having some Fri 13th bad luck this morning. I wrote this post previously. Went to view it. Had problems and now it is not showing up. So here is my second attempt and I will try to remember what I wrote the first time.

Today's lunch is more of an adult lunch. I am guilty of making my lunches look like they are for a little kid. I like cute. That's why I do it. But this morning I was running behind. So no picks or anything.

Today's adult lunch has chicken cooked in teriyaki sauce, mung bean sprouts cooked with scrambled egg an soy sauce, a Babybel cheese, grape tomatoes, green bell pepper and a Cutie orange.

For some reason I have been craving hummus. Last night I went to the store and bought some called Supremely Spicy. After licking the spoon this morning while putting together my lunch I can say it is spicy... And delicious!

In this bento I have my Supremely Spicy Hummus, whole wheat pita, green bell pepper, a Light Babybel cheese, grape tomatoes and cutie orange. I can't wait for lunch!

I apologize for being MIA for so long. It was not my intent. I guess I was in a funk but still that should be no excuse. It was so much easier to grab a frozen diet meal than prepare a lunch. But our intern at work brought his lunch in a Hello Kitty brown paper sack and it reminded me how many HK things I had. So I spent the time last night to prep some meat, put some in the freezer and one in the frig.

This morning I threw it all together. No characters but it's still a meal.

This bento includes chicken cooked in Chili Pepper Sauce, a Cutie Orange, Light Babybel cheese, a grape tomato, soy sauce and a chicken dumpling.

It has been a long time since I've made a cute lunch. I don't know what kept me from it. I have been busy but that never kept me from it before. I guess I was lacking inspiration.

Last night The Kid asked me if I would make him a lunch today since the school cafeteria was having some emergency work done and there would be no hot food line.

Last night I cooked some rice and roasted some sweet potatoes. For the sweet potatoes I cut them up, added some oil, cinnamon and brown sugar. Yum! I was eating some as I was packing it away in the frig.

It sure was hard to figure out what to put in the lunch since I have not been shopping for bento lunches. But I think I didn't do too bad for what we had.

For The Kids lunch he has chicken nuggets & BBQ sauce, white rice with black sesame, roasted sweet potatoes, a Babybel cheese, quail egg and homemade banana nut bread.



And since I was making The Kid a lunch I thought I would throw one together for myself. I used the rice to make a snowman giving him a pepperoni scarf. Also in this box I have my own roasted sweet potatoes, carrots, bell pepper, a Babybel cheese, quail egg soaked in soy sauce, beef sausage and banana nut bread.

Today's lunch is spaghetti leftovers and a salad. Not much to say about it. Yesterday was a leftover hamburger that got plastic baggy'd with some chips. I need some serious motivation/inspiration.

This was suppose to be my lunch but the more I scratched my head and thought about what to put in there the more disappointed I became. So I changed it to a snack. I was kind of at a loss this morning. I need to get back in the groove. And why do my bentos that suck take the longest to make? For as ugly as this one is it took so long to put together.

In the failed bento I have a tortilla cut with a ghost cutter, a laughing cow cheese wedge, ham & beef flowers, cherry tomatoes, a quail egg I attempted to make into a pumpkin, a mini sweet pepper and a carrot cut using a pumpkin cutter.

Today for lunch I made some Rosemary rice. I took chopped onion and sautéed it then added some minced garlic, salt and rosemary. I then added some water and fast cooking rice. It smelled so good this morning and I can't wait until lunch.

Also in this bento I have some chicken nuggets, grapes, cherry tomatoes, and a Babybel cheese.

In this bento I have white rice, scrambled egg, ground beef, carrots, and green onion. In the thermos I have some chicken stock that I added soy sauce, pepper, garlic and more green onion. And I grabbed an apple from the table.

My sprig of rosemary is from the same coworker that gave me basil. I need to bake some rosemary bread. That would be yum!

Today's lunch was just quickly thrown together. I took a leftover hamburger patty, crumbled it up and placed some rice on top and sprinkled it with black sesame seeds. I then threw in a Babybel cheese, cherry tomatoes, grapes and a piece if broccoli.

I think I'm going to try and skip the broccoli for a while. I have not been wanting to eat it. Although it holds things so well in bento.

The Kid and I decided to try out Bento Asian Diner in Broken Arrow, OK. For $8.00 each you get to pick out a soup, sushi (4 pieces), rice or lo mien, a meat, eggroll/wonton/dumpling.




The Kid loved his miso soup. I had the eggdrop. My soup was thick and tasty.



The Kid had teriyaki chicken, eggroll, steamed rice, & California roll. He liked everything except the eggroll.



I had chicken dumplings, fried rice, spicy chicken & shrimp tempura roll. Everything was very good.



We also got a Dragon roll to share. It wasn't too bad. We should have skip this though since we had plenty of leftovers. But I did eat those for lunch the next day.

Overall opinion of Bento Asian Diner... We would go back if we were in the area.
